The Inevitable Egg

USA Weekend, covering all bets, ran an article on salads that can be made from leftover Easter eggs. Each recipe starts with "6 large, hardboiled eggs, peeled and chopped" and -- taaaake it away!

Mediterrean
1/4 cup minced red onion
1/4 cup olive oil
1/4 cup Kalamata olives, chopped
1 T lemon juice
2 teas. minced, fresh oregano
Pepper to taste
Mix in a bowl and serve

Mexican
1/4 cup minced Vidalia onion
1/4 cup olive oil
1/4 cup salsa (from a jar)
1 T chopped cilantro
2 teas. lime juice
1 teas. ground cumin
Minced jalapeno - optional
Mix in a bowl and serve

Indian
1/4 cup minced Vidalia onion
1/4 cup mayonnaise
1/4 cup golden raisins
1/4 cup diced celery
1 T chopped cilantro
2 teas. rice vinegar
1 teas. curry powder
Pepper to taste
Mix in a bowl and serve
